One of the new concepts from Ayala Malls is "Big Bite!  The Northern Food Festival" from October 18-20 at MarQuee Park, Angeles City. Big Bite is a food festival that will showcase the cuisines of Pampanga, Bulacan, Ilocos, Baguio, Tarlac, Nueva Ecija, Zambales, Bataan, Pangasinan, Cagayan and La Union.


Tibok-tibok from Susie's, buko pandan and siomai from Nathaniel's, baked macaroni from Toll House, halo halo from Kabigting's, and tocino from Pampanga's Best are only some of the delicacies to be featured in Big Bite.

Big Bite will also have a cook-off among culinary schools. Philippine Women's University, System's Plus College, Angeles University Foundation,  NorthPoint Culinary Academy and Bulacan State University will go head to head in an unforgettable cooking competition every day during the food festival from 3:00-5:00PM.   In three days of competition, find out which school will be crowned the first Big Bite! Culinary Cook Off champion.


Chefs, cooks and culinary legends like Lilian Borromeo, Sabrina Artadi, Sau del Rosario and Rolando Laudico will hold cooking demonstrations during the event.


Pampanga is considered the food capital of Luzon. When you meet a person from Pampanga, you normally assume that he or she knows good food. Pampanga is considered the birthplace of sisig, a savory and sometimes spicy dish of mixed pork parts served on a sizzling plate.  Angeles City, in particular, has been called the "Sisig Capital of the Philippines" by the Department of Tourism.  It is the city from which sisig was first invented by Lucia Cunanan, proprietor of Aling Lucing's restaurant. Pampanga also lays claim to the origins of every Filipino family's favorite:  kare-kare (beef, oxtail, beef tripe and vegetables in ground peanuts and/or peanut butter stew with shrimp paste on the side).  Over the years, variations of the dish have emerged such as chicken, fish, goat, seafood and even vegetarian kare-kare.  Some cooks also insist that kare-kare is still best cooked in a palayok (clay pot).

Kapampangan cuisine is characterized as Filipino food with a mix of Spanish, Mexican and Malay influences.  Food is usually prepared in a lengthy and often laborious process, but the results are always especially scrumptious.  The province's richness in rice, corn, sugar cane, tilapia and other produce has made a wide array of ingredients available to every cook.


MarQuee the "it" place for shopping, dining and entertainment is just a quick turn from the North Luzon Expressway in Angeles City, Pampanga.  Opened since 2009, MarQuee Mall is everybody's favorite gathering place and easily accessible from Manila and other points of Luzon through NLEX.





There will be a family heirloom recipe contest where people can share their favorite recipes handed down from different generations.  Contest is open to legal residents of CAR, Region I, Region II and Region III.   Entries will be entertained on Friday, October 18, 2013, 7:00AM –10:00 at the MarQuee Park.  The best recipe wins P20,000!  As for the big eaters, everyone is welcome to join the food eating contests at Big Bite!  Festival-goers will also be delighted with live entertainment nightly.
